Flathead Cherry Mezzaluna
Presented in a half moon shape ("mezzaluna"), this cake is as seasonally fresh as it gets!
Seven layers of feather-light almond joconde spongecake are skim-coated with bittersweet chocolate. Then fresh-from-the-orchard Flathead cherries -- in all their seasonal ripeness -- are folded into a perky cherry mousse between each cake layer.
Coated in a jewel tone glaze and bookended with striped ruby chocolate plaques, this summer dessert is a true one of a kind.
